Heading to the Beach?

What should you pack

 Summer is a great time to visit the beach. Knowing what to pack for a day at the beach is both fun and challenging. A insulated beach bag works best add towels, hats, sunglasses an umbrella, sunscreen, hand sanitizer, wipes, water and snacks (fruit, nuts and vegies). Stay hydrated and apply sunscreen frequently to avoid burning. Be sure and pack some beach toys for the kiddos. Be sure and take a zip lock bag to put any shells that you may find in to bring home.

June is also National Iced Tea Month. Cool down with a refreshing cup of iced tea. Take some time to enjoy the many flavors, some of which contain fresh fruit which is also great to use in the summer.

Lets Eat 

Summertime Peach Iced Tea

Fresh mint leaves

1 can peach nectar (11 oz)

2 qt. cold water

8 tsp Summertime Earl Grey loose-leaf tea

Place mint leaf in each section of 2 18-well ice cube trays. Divide peach nectar among prepared wells of the ice-cube trays and freeze completely.

Bring cold water to a boil.

Place tea leaves in a 2-qt. saucepan. Pour boiling water over tea leaves. Steep, covered for 3 min. then strain. Ref. until cold.

When ready to serve, fill glasses with peach nectar ice cubes and pour iced tea over cubes to cover.


Fruit Pizza

1 roll Sugar cookie dough

1 pkg. cream cheese

1/3 c sugar

1 tsp vanilla

2 Kiwi. Peeled, halved and sliced

1 c strawberries cut in ¼’s

1 c blueberries

½ c apple jelly

Spray a pizza pan with Pam, spread cookie dough on pan, bake 16-20 min at 400 until golden brown. Cool for 30 min.

Mix cream cheese, sugar and vanilla together and spread on top of baked cookie.

Arrange fruit over cream cheese. Brush jelly over top of pizza. Let chill at least 1 hour before serving
